Know the Maison

Champagne Maison LALLIER, established in 1906 in Aÿ, one of the Grand Cru villages of the Champagne region, is renowned as a venerable maison that has been sharing the fine traditions of champagne with the world since its inception.
LALLIER cherishes Aÿ, known as the holy land of Pinot Noir in the Champagne region. While they carefully cultivate Pinot Noir, they also surprisingly grow Chardonnay in the same village. LALLIER’s spirit lies in knowing Aÿ inside out and never forgetting to embrace new challenges.

LALLIER has set its sole rule to meticulously observe the condition of the vineyards and grapes, focusing on maximizing the grapes’ appeal. To achieve a fresh and pure taste, they minimize dosage.
Supporting LALLIER’s quality is their style of long aging. Even for non-vintage, they base their production on a minimum of three years of aging, exceeding the regulations set by Champagne law.

The Maison values craftsmanship, authenticity, and “nature”. The founder, René Lallier, was committed to environmental conservation, and today’s Lallier is also committed to sustainable viticulture. The idea that great Champagne is a gift of nature and that humans should continue to coexist with nature is another appealing aspect of Lallier.

The craftsmanship of LALLIER is exemplified by their haute couture champagne making. They ferment grapes while discerning the individuality of each vineyard plot and adjust the balance, such as malolactic fermentation, depending on the vintage.
Another intriguing aspect is the yeast they use. Sometimes, they ferment grapes picked earlier than the usual harvest time and use the yeast generated there for the main alcoholic fermentation. This is truly LALLIER’s craftsmanship, achievable only by artisans with high technical skills and experience.

The cuvée offered in the “Plan with Champagne” is “R.020”. The “R” stands for the French word “Récolte” (harvest) and expresses the individuality of the grape harvest year. Cellar Master Dominique Demarville describes the 2020 harvest as “an excellent year, with good weather conditions and a harvest at the expected level of ripeness.
