After working at a hotel and as a restaurant manager, he became independent in 2007 with the opening of the Champagne bar “La Champagne”. His concept is “to create a Champagne culture in Japan. He has organized the “Summer Champagne Festival,” the 10th (2018) and final edition of the festival was held at the Palais du Tau, a World Heritage Site in the Champagne region, and was recognized as “150 Years of Japonisme” to commemorate the 150th anniversary of France-Japan relations. The celebration was attended by 50 producers and 120 guests from Japan. 2012 saw the launch of Lien d’Or de Champagne, an association to promote Champagne. In the same year, he was appointed Officier of the Order of Champagne. Later, he was appointed Chevalier of the Champagne villages of Bougie and Le Menil sur Auger (the first Japanese to do so), and has earned the trust of Champagne producers. Currently, he operates Bistro Champagne, produces Champagne hotels, and teaches at wine schools to educate people about Champagne.
