AWASUSHI Awasushi offers five different types of Champagne by the glass every day so that you can enjoy the stories of the various maisons. The most popular is the monthly Champagne comparison course, carefully selected by our sommelier. Sake is also available, so please feel free to ask our staff for more information. Chef Aiyumi Abe

Born in Fukuoka in 1983. After graduating from high school, he started his career as a chef at a local ryotei restaurant in Fukuoka. With a dream of spreading Japanese sushi culture to the world, he started his career as a sushi chef in Ginza. In Shanghai, he served as head chef, serving authentic Edomae-zushi to a diverse range of guests to great acclaim, and in August 2024, he was appointed head chef at AWASUSHI Awasushi. As a sushi chef who attracts guests from all over the world with his delicate and bold sensibility, he will challenge the marriage with Champagne. Cuvée J2 is a space where guests can enjoy Champagne with all five senses, and fully appreciate its elegance and the philosophy of its creator. At AWA SUSHI Awazu Sushi, we offer a new way to enjoy sushi, combining the Japanese flair of the Japanese culture with the glamorous and profound culture of Champagne.
