AWA SUSHI is unique in that you can enjoy five different types of champagne by the glass every day, allowing you to easily enjoy the stories of various maisons.

Our most popular course is the monthly champagne tasting course, carefully selected by our sommelier.

In addition to champagne, we also offer sake and non-alcoholic drinks.

Head Chef: Kim Jin-hwi

Born in Seoul, Korea in 1993. He entered the world of cuisine at the age of 14 and was fascinated by its skill and depth. With the desire to learn sushi in Japan, he came to Japan at the age of 22 and learned the basics at a sushi restaurant in Osaka. Seeking more advanced techniques, he moved to Ehime in search of an environment where he could come into contact with Setouchi seafood. At a Michelin-listed restaurant, he established techniques from preparation to nigiri. After that, he gained experience as the chef of “Sushi Shiro” in Osaka, and in 2024, he joined “AWA SUSHI” as the sous chef. While respecting tradition, he aims to pursue the possibilities of sushi that evolve beyond national borders, and to disseminate the new food culture of Edomae sushi and champagne from Japan to the world. With the desire to “continue to challenge new expressions of Edomae sushi and champagne,” he takes a step forward as the head chef. He will continue to refine the unique experience of “AWA SUSHI” and continue to challenge the evolution of cuisine and hospitality as a presence that plays a part in CUVEE J2 HOTEL OSAKA’s goal of becoming a travel destination.
